A speciality of the Fujian province, China, white teas take their name from the downy hairs wich adorn young shoots of the tea bushes used for its production, namely the Daai " big white" variety . These teas are considered to be refreshing by the Chines, and are therefore consumed during hot times. White teas distinguish themselves by their fine subtlety and require great care in their preparation.
White teas teas excel - prepared in a "gaiwan" (a lidded bowl) - when used in repeated, very short infusions in tepid or cold water. An interesting alternative to this traditional preparation is to steep their leaves overnight in cold water, stored in the refrigerator. |
