Green teas are generally produced from young tender shoots, and therefore care must be taken not to damage them during infusion. The best way to prepare a green tea is therefore to either : use water at a moderated temperature (Chinese green teas 80 °C), or : to first add a little cold water to the leaves and then top un with boiling water to achieve the same result.
